Honey Crystallization or Freezing
There are two types of honey.
Liquid honey
Solid or Crystallized Honey
Liquid Honey
means Honey is in molten liquid state.
Solid/Crystallized Honey
means Honey is in frozen granular or soft state.
What is Crystallization or freezing of Honey?
Pure Honey can crystallized or freeze in winter season or at cold/low temperature.
You’ve observed it most of the time that when you buy a jar of raw or organic honey , it is in liquid smooth form but with passage of time honey gets grainy , frozen or even became solid. This process is known as crystallization.
Crystallization is a process that occurs naturally over time to pure raw honey. This process helps to preserve and store the minerals, nutrient’s and quality of honey. Frozen honey can be in liquid form with just a slight heat.
Some foreign companies sold honey in the market that does not freeze or crystallize even in cold weather. Honey that does not freeze is known as processed or pasteurized honey .
But this pasteurizing process reduce antioxidants and a large amount of vitamin C and minerals from Honey, hence it’s proved that crystallization/freezing of honey is not a defect but a natural process.
Dr Rafiq Ahmad (Senior Scientific Officer, Chief Coordinator department of mugs(fly/insect) Founder of Pakistan Agriculture Research Council Government of Pakistan Islamabad) in his book named “Modern Beekeeping” at the page# 217 stated that :-
“Crystallization or freezing process is faster in such honey which has large ratio of grape sugar. This honey usually freeze or crystallized at between 13 to 18 Centigrade. Frozen or crystallized honey looks like ghee or icecream. It tastes even better in freeze or crystallized form and can be eaten in large quantity. Many people like to eat frozen honey as they specially freeze honey by refrigerating it in summer season.”
